Have you ever heard about BODAIMOTO??

When I've discovered this, I found it is fascinated.
Moto is a yeast starter to be able to ferment sake.
 
Well, this BODAI MOTO is a very old method of making sake and the history is back to the Nara era (710-794).
In this era, many monks in the temple were brewing sake as they have exemption to pay any tax. Off course temples after temples started to brewing sake (I would!) and it's became very large number of temples involved sake making.
 
The temple called SEIRYAKU JI were stands next to BODAI IZUMI(fountain in Japanese) in Nara prefecture. This Seiryaku Ji use the natural spring water from Bodai Izumi, we believes this is the origin of the name of BODAI MOTO.
Then many monks started to using same method as Seiryaku Ji, so probably you can guess, this is the beginning of Moto brewing.
 
Bodai Moto also known as Mizu Moto (water moto), basically add some steamed rice and uncooked rice into water then wait for lactic acid and natural yeast to grow in the water. The water became sour (acid) after few days, so this used for brewing sake.
The uncooked rice will be taken out and steamed, transfer to the main tank to brew with Koji and other materials.
Isn't it amazing?? how the monks find out this brewing method in such a old time. The equipment were not advanced yet and I'm sure so many times they failed to brew, as the Moto caught bacteria.
 
Actually this process were disappeared from the industry once but in 1999 Bodai moto were reintroduced.

菩提酛(ぼだいもと)って聞いた事ありますか?
私が初めて菩提酛を耳にした時は、本当に感動しました。
そもそも酛と言うのは、優良酵母を培養させ、後に水、米、麹蒸し米と混ぜ、そしてもろみとして発酵させる酒造りには欠かせないものです。
 
この菩提酛の歴史はとても古く、実は奈良時代(710−794)まで遡ります。
この時代、世間で酒造りを担っていたのはお寺のお坊さん方。お酒を造る事で、免税を許可されたため、次第に何処のお寺も日本酒を仕込む様になりました。(私も、賛同します!) そして、多くのお寺で日本酒造りが行われていたそうです。
 
奈良県にある、正暦寺と言うお寺のそばには菩提泉と言う泉があります。この正歴寺では、昔この泉の水を使って日本酒を醸していた事から、菩提酛の名前の由来がこの泉であるのでは、と言う見解が最も有力な様です。
 
菩提酛は、別名水酛とも呼ばれる事があります。
これは、火を通していない生のお米と、蒸したお米を水の中に入れ、天然の乳酸菌と酵母がその水に住み着くまで待つ、と言う製法です。何日か経つとこの水が酸っぱくなり、乳酸菌が上手く繁殖した事になります。そしてこの水を使って日本酒を醸したのです。
この酛を作る時に使用した生のお米はこの後蒸して、日本酒を造る際に使用されます。
その昔、酒造に使用する機器が今日の様に、そろっていなかった当時お寺のお坊さん方がこのような製法で日本酒を造る事を導入したなんて、こんな話を聞いているだけで、とても驚きではありませんか? なんだかロマンさえ感じます。。
恐らく、大気中の悪い細菌が繁殖したり、時には失敗も何度もあったかもしれません。
 
この製法は、一時期業界から姿を消したそうです。しかし、1999年にまた呼び起こされ、そして現在でも菩提酛の日本酒を醸していらっしゃる蔵元さんは何件かあります。
