Our second sake event was held at Japanese restaurant Nagomi.One of our sake supplier Tachikawa san has giving us so much help and support this time.Thank you Tachikawa san.先日、第二回日本酒の会をなごみレストランで行いました。
弊社でも大変お世話になっている長谷川酒店の太刀川さんが今回はいろいろとお手伝いしてくださいました。
So this time, we tried 4 different types of sake with very important ingredient for Japanese cuisine, which is Miso, soy sauce and dashi.I’ve brought Koikuchi Shoyu, Tamari Shoyu, Katsuo Dashi, Kobu Dashi, White miso, Red miso and Mugi miso.今回のテーマは日本酒と日本食には欠かせない材料、味噌、醤油、そして出汁とのテイスティングでした。
今回用意したのは、醤油、たまり醤油、鰹だし、昆布だし、白味噌、赤味噌そして麦味噌です。
* Koikuchi-shoyu is often called simply shoyu. It has a dark brown colour, rich flavour and complex aroma. One tablespoon contains over one half teaspoon of salt. It may be used as an all purpose ingredient.* Tamari is made nearly entirely from soybeans with no wheat addition. It has dark brown colour, and the flavour and aroma are rich and strong. Use tamari as condiment or flavour enhancer by adding it at the end of preparation.* Katsuo dashi is a Japanese stock made from katsuobushi (dried bonito flakes).* Kobu dashi is a Japanese stock made from Konbu (dried Kelp).* White miso is the most widely produced miso, made in many regions of the country. Its main ingredients are rice, barley, and a small quantity of soybeans. Compared with red miso, white miso has a very short brewing time. The taste is sweeter, but the umami is softer than red miso* Red miso is aged for a long time, such as over one year. Therefore, due to Maillard reaction, the color of this miso changes gradually from white to red or black, this giving it the name "red miso". Features of the taste are saltiness, and some astringency with umami. Factors in the depth of color are the formula of the soybeans themselves and the quantity of soybeans used.* Mugi miso, which is made from barley and soya beans. It often has a chunky texture and is good in salad dressing, dipping sauce for summer vegetables such as cucumber, carrot or even kamaboko.
Dishes started to cover the table from right to left so we decided to eat and eat….I think everybody had so much fun tonight.I could invite few people who missed event last time, also someone who doesn’t work in catering industry.It was so nice to talk a lot about sake but not only about sake.We were so full but still thirsty, so few people went to the pub just around the corner.Everybody gave me good feed back so it was really good.そうこうしていると、お料理がだんだんとテーブルを覆い尽くしてきたので、頂く事に。
今日は、いろいろな方の参加も手伝って、日本酒を知らない方ともお酒の話が沢山出来たり、また日本酒意外の話でもとても盛り上がって、とても楽しめました。
お会計を済ませ、店を出た後もなんだか喉が渇いていたので近くのパブで皆2杯程ひっかけて家路に着きました。

I’ve been invited for a sake tasting lunch with World Sake Imports founder Chris Pears, at the restaurant Kyasii.I’ve met him several times in London and New York.He has a big passion about sake and how amazingly he just passed the course for "Sake Sensory Evaluation" which The Japan National Research Institute of Brewing (NRIB) offering for brewery professionals entitled.If you pass the examinations, you are given certification as "Expert Sake Assessor." So far 47 people have passed the Course. Chris Pearce was the first non-Japanese to receive Certification as "Expert Sake Assessor" in 2009.So I had so many questions to ask him and I was so looking forward to hearing about the examination from him.He told me how difficult it was to concentrate all senses onto his palate. The examination sounds so complicated and if I was him I’m not sure I would pass it…The event was hosted by Asami Tasaka from World sake imports.And Chris was telling us about how to taste sake in Japan, about rice, Koji, brewing process and his examination.Then we tried 4 different types of sake.Chris was giving us a little explanation of each sake and after I had a sip from all glasses, my Buta no Shoga yaki set (lunch set menu of grilled pork with ginger) has arrived on the table.It was really good value for £15 coming sake seminar + tasting+ lunch.I had to go to work after, so i rushed into the tube after the seminar finished…Chris is giving one more seminar exclusive for our staffs tomorrow.I’m looking forward to that!先日、日頃から大変お世話になっているWorld Sake ImportsのChris Pearsさんが主催した日本酒のイベントがKyasiiで行われました。
Chrisさんには既に何度もロンドンやニューヨークでお会いしていましたが、今回のロンドン訪問はとても久しぶりだったので、楽しみにしていました。
Chrisさんは日本人でも取得が困難な日本酒の官能資格の検定に合格しました。
今現在ではたったの47人しかこの資格を保持している人はおらず、Chrisさんは外国人にして初の取得者だとか。
と、言う事なので私は沢山質問があり、お会いするのを楽しみにしていました。
イベントはWorld sake importsのあさみさんが進行を勤めました。Chrisさんが日本と国外で差のある酒の味わい方、米、そして麹の事、そして日本酒の官能試験等を話してくれました。その後は4種類の日本酒を試飲。
それぞれの日本酒に対する意見やバックグラウンド等を話して頂いた後にお昼ご飯を頂きました。
お酒のセミナー+試飲+お昼で£15とはかなりお得。
お昼の後は仕事に戻らなければならなかったので、すぐにおいとましましたが、とても有意義なセミナーでした。
明日、Chrisさんが弊社のスタッフにセミナーの時間を設けてくれています。
